Recipe ingredients

  • Sugar:
    • The main ingredient for making this yummy fudge recipe.
    • Sugar in the form of plain sugar, in the form of marshmallow fluff, and in white chocolate will also need for the recipe. Sugar, sugar, sugar!
    • I did reduce the quantity of sugar; all the recipes I saw online actually used more sugar than I did. I would have reduced it even more, but I didn’t want to endanger the consistency of the finished product.
  • Strawberry marshmallow fluff (Amazon affiliate link):
    • It consists mainly of sugar as well.
    • The fluff comes in different flavors, sold in plastic jars. The jars I can buy around here contain 6.3 oz/ 180 g fluff.
  • White chocolate or white chocolate chips
  • Evaporated milk with about 7,5 % fat
  • Food coloring:
    • I used red food coloring in gel form mixed with strawberry essence to color the fluff fudge.
    • If using gel colors, you will not need much; about ¼ teaspoon is enough to get those pretty pink swirls.
  • Candy thermometer:
    • The use of a candy thermometer makes things so much easier when making fudge of any kind; knowing the exact temperature ensures the best results.

How to make fudge with marshmallow fluff?

  • Chocolate: Chop it finely. If using white chips, skip this step. Set it aside.
  • Prepare food coloring: Combine the red food coloring with the strawberry extract (or vodka) in a small bowl. If using vanilla extract, leave out the vanilla extract used later in the recipe. Stir until the gel dissolves evenly. Set aside.
  • Cook: Combine sugar, butter cubes, and evaporated milk in a heavy saucepan. Slowly bring to a boil over medium-low heat while stirring often (1).
  • Once it comes to a rolling boil, check the temperature frequently with the candy thermometer. Remove the pan from the heat as soon as the temperature reaches 234 degrees Fahrenheit/ 112 degrees Celsius (2).

  • Stir in the chopped chocolate (or white chocolate chips), marshmallow fluff, and vanilla extract. Stir until the chocolate is melted and the mixture is smooth (3).

  • Make the swirls: Drop small amounts of the food coloring mix all over the fudge mixture (4).
  • Using a knife or a fork, create a swirled pattern by carefully going through the fudge mixture back and forth (5). Don't overdo it, or the fudge will turn pink instead of nicely patterned.
  • Pour the fudge mixture into a square pan lined with oiled aluminum foil (6).
  • If you want to make heart-shaped fudge, place small dollops of it in small silicone molds.
  • Let cool for a while at room temperature, then transfer to the fridge until completely set (7).

  • Cut: Remove the sweet strawberry fudge from the baking pan and cut it into small pieces (8) or remove it from the silicon molds by pressing the fudge out from underneath (9).

Expert Tips and FAQ

  • Chocolate: I recommend using a brand of chocolate you like, something that you would enjoy eating in plain form as well. There is no use in making or baking something using cheap, low-quality chocolate; you will always be able to tell the difference.
  • Strawberry extract: You will need a little liquid to dissolve the gel food coloring. Ideally, you would use pure strawberry extract, but if that is not available, you can replace it with vanilla extract or a small amount of vodka.
    • If using vanilla extract to dissolve the food gel coloring, leave out the vanilla extract used later on in the recipe and be aware that the fudge will look like strawberries but taste instead of vanilla. The strawberry flavor in the marshmallow fluff will not be enough to make the fudge taste like strawberries unless you use strawberry essence.
  • Food gel coloring: It is preferable to use the gel as it is very concentrated and will not add too much moisture to your pink strawberry fudge.
  • Candy thermometer: Trusting a recipe stating that the fudge needs to be boiled for exactly 5 minutes (or whatever) is tricky. It all depends on the heat, the size of the pot, the thickness of its bottom, stirring, and so on. Sometimes it works; sometimes, it doesn’t. Refrigerator: it keeps for about 2 weeks.
Freezer: 2-3 months.

How to freeze and thaw?

Freeze the pieces or a larger block. The advantage of freezing larger pieces is that there is less surface area to dry out, while freezing smaller pieces will allow you to remove fudge from the freezer in small quantities.
Wrap the block or the pieces in plastic wrap or aluminum foil (individually) and place those into airtight containers or freezer bags.
Thaw slowly in the fridge; rapid temperature changes can affect the texture and flavor of the strawberry fudge.

How to stop it from drying out?

You should wrap the strawberry fudge with marshmallow fluff in wax paper and then place it in an airtight container.

Ingredients

  • ¼ teaspoon red food gel coloring Note 1
  • 2 teaspoons pure strawberry extract Note 2
  • 400 g sugar 2 cups/ 14 oz
  • 150 g unsalted butter scant ⅔ cup/ 5.5 oz
  • 150 g evaporated milk ⅔ cup/ 5 fl. oz
  • 300 g white chocolate, chopped or white chocolate chips 1 ¾ cups/ 10.5 oz
  • 1 jar strawberry marshmallow fluff 180 g/ 6.3 oz
  • 1 teaspoon pure vanilla extract Note 3

Instructions

  • Line a baking dish (20x20 cm/ 8x8 inches) with aluminum foil. Lightly oil the foil.

  • Chop the white chocolate finely. Skip this step if using white chocolate chips. Set aside.

  • Food coloring: In a small bowl, stir together the food gel coloring and the pure strawberry extract until the color is evenly dissolved. Set aside.

  • Cook: Place the sugar, cubed butter, and evaporated milk in a saucepan. Bring to a boil on medium-low heat, stirring often. Once it boils, stir continuously and start checking the temperature with a candy thermometer. Once the mixture reaches 234 degrees Fahrenheit/ 112 degrees Celsius, remove the pan from the heat.

  • Stir in the white chocolate, marshmallow fluff, and vanilla extract. Stir until the mixture is smooth.

  • Make swirls: Drop small amounts of the food coloring mixture all over the fudge mixture. Using a knife or a fork, create a swirled pattern by carefully going through the fudge mixture back and forth. Don't overdo it, or the fudge will turn completely pink.

  • Let set: Pour the fudge mixture into the prepared pan or place small dollops of it in heart-shaped (or any other shape) silicone molds. Let cool for a while, then transfer to the fridge until completely set.

  • Cut: Remove from the baking dish and cut into small squares or remove from the silicon molds by pressing the fudge out from underneath.

  • Store: The strawberry fudge keeps for about 2 weeks in the refrigerator. To stop it from drying out, you should wrap it in wax paper and place it in an airtight container.

Notes

  1. Gel coloring is best; it is very concentrated and doesn’t add too much moisture to the mixture.
  2. If strawberry essence is unavailable, use vodka or pure vanilla extract. If using vanilla extract, leave out the vanilla extract needed later in the recipe. Using vanilla extract will reduce the strawberry flavor; the strawberry marshmallow fluff is not enough for an intense strawberry flavor unless you use the strawberry essence. However, pink vanilla fudge is also delicious.
  3. Leave out if using vanilla extract to dissolve the food gel coloring.
